Chocolate Banana Muffins

Ok I get the confusion, the title says muffins, the photos show cupcakes and donuts...

Hear me out!

These muffins are SO good, they can seriously pass as cupcakes by just tossing a little icing on top, which is what I did to spice them up for valentines day.

They're definitely not the worlds healthiest muffins and pack a solid dose of sugar, but we all need to live a little sometimes right?

So basically, if you're looking to get rid of those overripe bananas you have sitting around and are down for either a muffin thats delicious but maybe not the healthiest option out there, or a cupcake that is a little healthier than most, make these.

Anyway, heres the recipe which I know is what you're really here for.

  • 1/2 cup salted butter, softened

  • ½ cup sugar

  • ½ cup light brown sugar

  • 2 eggs

  • 4 very ripe bananas, mashed

  • ½ cup plain yogurt

  • 1 teaspoon vanilla

  • 1 ¼ cups all-purpose flour

  • 1/3 cup cocoa powder

  • 1 teaspoon baking soda

  • In a stand mixer or large bowl, mix butter with sugars until creamed together.

  • Add in eggs, banana, yogurt, and vanilla, mixing until fully combined.

  • Mix in flour, cocoa powder, and baking soda until even batter is formed.

  • Pour batter into greased muffin pan, filling to 3/4 full, and bake at 400° F for 15 to 17 minutes, or until a toothpick inserted in the centre comes out clean.
