Mexican Sweet Potato Salad

Ingredients

2 cups of cubed & baked sweet potatoes
1/2 cup of drained & rinsed canned black beans
10 grape tomatoes cut into halves
A handful of chopped cilantro
2 oz of crumbled feta (I used goat feta 🐐)
A drizzle of your favourite tahini dressing
Fresh ground pepper to top it off
Directions
Combine all ingredients in a large bowl and mix well
Top with a drizzle of your favourite tahini dressing and some fresh ground pepper
Serve hot or cold, its amazing both ways!
