No Bake Lemon Balls (GF, DF)

Ingredients
1/2 cup almonds
1/2 cup cashews
Juice and zest from 1 lemon
1 cup (100g) pitted dates
3 tbs @organikahealth collagen peptides
3 tbs @wholesomesweet icing sugar
Directions⠀⠀
Pulse nuts in a blender until they are a coarse meal.
Add in dates, lemon juice and zest, and collagen and pulse until fully combined.
Roll into 20 tablespoon sized balls and sprinkle each one with icing sugar.
Chill in the fridge for 30 minutes before eating or store in the fridge for late enjoyment. ⠀⠀
