No Bake Lemon Balls (GF, DF)

  • 1/2 cup almonds

  • 1/2 cup cashews

  • Juice and zest from 1 lemon

  • 1 cup (100g) pitted dates

  • 3 tbs @organikahealth collagen peptides

  • 3 tbs @wholesomesweet icing sugar


  • Pulse nuts in a blender until they are a coarse meal.

  • Add in dates, lemon juice and zest, and collagen and pulse until fully combined.

  • Roll into 20 tablespoon sized balls and sprinkle each one with icing sugar.

  • Chill in the fridge for 30 minutes before eating or store in the fridge for late enjoyment. ⠀⠀
