One Pot Italian Sausage & Bell Pepper Pasta


I know I know, another pasta recipe .. What can I say, I love a good bowl of carbs.


I especially love pasta with a homemade sauce! It‘s such an easy dish to make from scratch and you can really add anything in the fridge into it to jazz it up, using up whatever produce is needing to go.

That’s actually how this recipe came about! We had a huge Costco size bag of peppers in the fridge that we forgot about and needed to use up so when I came home to a big box of Hunt’s heirloom tomatoes at my front door, I knew exactly what to make for dinner.

One Pot Italian Sausage & Bell Pepper Pasta


Ingredients

  • 1 bag of Gogo Quinoa Fusilli pasta

  • 500g of ground Italian sausage

  • 1/2 onion, diced

  • 2 cloves of garlic, minced

  • 2 bell peppers, thinly sliced

  • 1 Tbsp of cracked pepper

  • 1 398 mL can of hunts crushed tomatoes

  • 1 156 mL can of Tomato paste

  • 1/8 cup of beef bone broth

  • 1/2 tsp cornstarch

  • 1 bunch of spinach


Instructions

  • Cook pasta as per instructions on bag, set aside.

  • Heat a large pan on medium high heat and cook sausage until mostly done.

  • Add onions, garlic, and bell peppers to pan, and sauté until veggies are slightly soft.

  • Add in cracked pepper, crushed tomatoes, tomato paste, and bone broth to pan and bring to a low simmer.

  • Once simmering, add in cornstarch and stir, then add spinach and stir until wilted.

  • Add pasta into pan and stir together until well combined.

  • Serve with cracked pepper and parmesan on top if desired.
