Greek Yogurt Protein Pancakes

Ingredients


  • 1 cup plain Siggis yogurt⁣⁣ (or other skyr/greek yogurt)

  • 1/2 cup Bobs Red Mill GF all purpose flour⁣⁣

  • 1/2 tsp Bobs Red Mill xanthan gum⁣⁣

  • 1 tsp baking soda ⁣

  • ⁣20 grams enhanced collagen peptides ⁣⁣(I love the Organika Health brand)

  • 2 organic eggs

  • ⁣⁣1/2 cup organic almond milk ⁣⁣

  • 1/2 tsp pure vanilla ⁣⁣ ⁣⁣

Directions


  • Combine all dry ingredients

  • Add in wet ingredients until fully combines

  • Cook by 1/3 cup scoops on a greased pan (I use coconut oil to grease my pan!) over medium heat flipping when bubbles form and sides look golden. ⁣⁣

  • Enjoy with your favourite toppings!
