Greek Yogurt Protein Pancakes

Ingredients

1 cup plain Siggis yogurt (or other skyr/greek yogurt)
1/2 cup Bobs Red Mill GF all purpose flour
1/2 tsp Bobs Red Mill xanthan gum
1 tsp baking soda
20 grams enhanced collagen peptides (I love the Organika Health brand)
2 organic eggs
1/2 cup organic almond milk
1/2 tsp pure vanilla
Directions
Combine all dry ingredients
Add in wet ingredients until fully combines
Cook by 1/3 cup scoops on a greased pan (I use coconut oil to grease my pan!) over medium heat flipping when bubbles form and sides look golden.
Enjoy with your favourite toppings!
