Sugar-Free Vanilla Almond Cutout Cookies

I'm a sucker for a good sugar cookie, but sometimes want to enjoy one without all the less-than-stellar ingredients...
In come these sugar-free vanilla almond cookies! They're so simple to make, a much healthier alternative to a regular sugar cookie, and I love that you can cut them into any shape you want to make them festive for all occasions!
Sugar-Free Almond Vanilla Cutout Cookies
2 cups of almond flour
1 teaspoon of baking powder
1 large egg
1/2 teaspoon liquid vanilla stevia drops
1/2 teaspoon pure vanilla extract
1 teaspoon water
1/2 cup of sugar free icing sugar (swerve is a great brand but any version would work!)
2 tablespoons of warm water
1-2 drops of food coloring if desired
Combine almond flour and baking powder in a large bowl.
Mix remainder of ingredients in a small bowl until fully combined.
Add wet ingredients into dry ingredients, mixing with a fork, mixing until completely combined. It will be quite dry and crumbly but don't worry, that's how it should look!
Once dough is fully combined, form it together into a ball with your hands, place on a sheet of parchment paper and roll it our with a rolling pin till its about 1 cm thick, then use your favorite cookie cutter to cut your dough into cookies! I used a small heart shaped cutter and got 24 cookies.
Place your cutout cookies on a parchment lined baking tray, and bake at 350 for 7-9 minutes.
While cookies are cooling, combine icing ingredients in a small bowl. Once your cookies have cooled, dip the top of each one into your bowl if icing until lightly coated, then place back on your parchment lined cookie tray to dry.
