The Perfect Poundcake

1 cup unsalted room temp butter
1 cup organic cane sugar
2 tsp pure vanilla
1 & 1/2 cups @bobsredmill gf all purpose flour
1/2 cup cornstarch
1/2 tsp @bobsredmill xanthan gum
Beat butter with a stand mixer until fluffy.
Add in sugar until fully combined.
Mix in all ingredients until a thick batter is formed.
Pour into a greased loaf pan and bake at 325 for 50-55 minutes.
Cut into slices and enjoy with your favourite berries and coconut whip.
