Two Bite Holiday Blondies

With the holidays around the corner, I am so excited to be baking with some of my fave ingredients like white chocolate and cranberries, 2 of my top 10 for sure. These blondies include both those ingredients and are hands down the perfect treat to make for a holiday party, especially one that has gluten free guests!

The super simple decorating makes them look fancy with minimal talent needed so thats definitely a bonus.


Cranberry White Chocolate Blondies


For the blondie

  • 1/2 cup coconut oil, melted**

  • 3/4 cup coconut sugar

  • 1 large egg

  • 2 tsp vanilla extract

  • 1 cup bobs red milll 1:1 flour

  • 1 tbsp baking powder

  • 1/4 cup white chocolate, melted**

  • 2 tbsp almond milk

  • 1/2 cup dried cranberries

  • 1/2 cup white chocolate chips

For topping/decorating

  • 1/4 cup white chocolate, melted**

  • Handful of white chocolate chips

  • Handful of dried cranberries


  • Mix all blondie ingredients in a medium sized bowl until fully combined, folding in the dried cranberries and white chocolate chips last.

  • Spread in a parchment line 8x8 or 9x9 pan and bake at 350 for 20 minutes.

  • Once cooled, decorate by drizzling remaining melted white chocolate overtop and sprinkling with white chocolate chips and dried cranberries.

  • **to melt chocolate, simply microwave in a microwave safe bowl for 30 second increments, stirring between each, until melted.**
